Cut two crabs in half and steam them for around four to five minutes. Once done, put them on a plate to cool. Next, take the fish fillets and steam them for around seven to nine minutes and set aside to cool, once done. Extract the crab meat and flake the fish, discarding the bones. Mix them together and then add the chives, mascarpone cheese and salt to the seafood mixture and combine well. Cover the mixture and put it into the refrigerator.

After, the stuffing is ready, take the zucchini blossoms and get ready to wash and clean them so that the inside of the flower is ready to be stuffed. Take the filling and stuff according to the size of the flower. Once stuffed, twist the petals together, to ‘close’ them. Then, make a batter with the flour and soda water. Dip the stuffed blossoms in the batter and deep fry till golden.

These blossoms stuffed with the seafood are to be cooked well but not over cooked. These can be served as delicious appetizers and your guests sure will love them.
